Resipes!

My BFF has started on her blog a new weekly recipe blog so I am going to join! I have a really hard time with the dinner department. I seem to just keep making the same ol same ol! I only do my shopping every other week so I can go to the wonderful walmart HELL! That I love so much but living in may berry makes be keep returning to walmart HELL! So here is my recipe for the week! My family LOVE'S this! It is kinda like a lasagna! It is called Three Cheese Kielbasa Bake. The resipie does not call for much but it makes A LOT!



12 oz uncooked elbow macaroni

2 lb. kielbasa halved and sliced

1tbs olive oil

2 medium onions chopped

2 medium zucchini quartered and sliced

2 medium carrots grated

1/2 teaspoon minced garlic

1 jar 26 oz spaghetti sauce

1can 14 1/2 oz stewed tomatoes

1 egg lightly beaten

1 carton 15 oz ricotta cheese

2cups of part skim shredded mozzarella cheese

2 cups of shredded cheddar cheese

2 green onions

Cook macaroni according to package meanwhile in a large skillet brown sausage in olive oil over med. heat. drain add onions zucchini carrot s and garlic. cook and stir for 5-6 min. or until crisp and tinder.

Stir in spag. sauce and tomatoes bring to a boil reduce heat simmer uncovered for 15 min. drain macaroni

in 2 greased 12inx9inx2in backing dishes layer a 4th of macaroni and meat sauce combined egg and ricotta cheese spoon a 4th over sauce sprinkle with 4th of cheddar cheese and mozzarella repeat layers top w/ green onions.

Cool 1 casserole cover and freeze for up to 2 months cover remaining casserole @ 350 for 15 min uncover for 15 min. longer or until cheese is melted.

Yeild: 2 casseroles 8-10 servings each!

SUMMER!

I cant wait for summer I WANT to wear my flip flops!

I see girls wearing there flip flops but I just cant bring my self to wear them in February...lol!
Winter feels like it is just dragging on! The wonderful weather people tell us we are getting snow and nothing WTH! If it is going to be winter it should be SNOWING! At least if there is snow we could go sledding build a snow man...something! :/ We just got a new camper I can't wait to go camping! and wear my flip flops!



I guess I will just have to be patient :(

Tuesday that feels like a Monday!

Well it is back to work today! Yay I am so happy to be back working but wow these days are really long! Yesterday the kids and I loaded up and went to good Ol Wal Mart HELL!..lol I guess it was not to bad! The kids were good the public was not! Everyone is back to school today (thank God!) Today is another game day we are playing Snowflake Lobos! I am sure they will woop us agin they already did in the 1st game:( Only 2 more games after today:(



It is only the morning but I am already feeling this! LOL

GAME DAY!

Today is another game day! Only 3 more games until playoffs! I think that our Mighty Elks will not be going to the playoffs:( We have not been doing very well:( But today we are playing the Mogollon Mustangs they are a really small school so may be have a chance! It have been a little trying when we lose because you can only have so many cheers when you are loosing..LOL!

I am back!

Well as you can tell I have not been blogging for a while! But now I am back hopefully..lol! Every thing has been so busy like always! Trying to keep up with family and friends on line takes a lot of time! I now have face book and myspace along with my blog! It is kinda confusing but I am getting it down. A lot has been going on around here lately first off I bought a new Yukon! I am so excited it is the nicest car I have ever had..lol and all of my kiddies can FIT! That is a first! 6 kids don't fit very well in a S10 blazer! Or an extended cab truck! And then we are adding another the Storms family our Niece Beth is getting married this summer to her boy friend Gage! I am so excited for her and you know how I love a wedding! :) Trenton is starting Basketball I am so happy for him to get in to sports now I just need to get him in to football so he can play in high school! I will be one of those crazy football Moms! It will be a while I have 4 years to get him prepared! LOL! Cheerleading is almost over for the year we only have 4 more games. I am trying to start my own business! A cleaning service! So that is keeping me busy too. It seems to be taking off really well! I need to think of a name for the cleaning business I am having a had time with that. Any suggestions would be great!
